I’ll never forget the day we got the call from the doctor telling us our sweet little 1-year old had food allergies. The list of foods he could no longer have seemed endless; eggs, peanuts, tree-nuts, shellfish, cod and soy. What the heck can I feed this child that won’t cause him any harm? As I sat in my office, with the door closed, I burst into tears thinking why Max? His first year of life was tumultuous to say the least. From scalded skin syndrome to a diagnosis of overall low muscle tone (causing delays in gross motor skills and delays in speech) and now this!!!
After the initial shock of the news I went into full on mom on a mission mode. I was not going to let a little thing like food allergies stop this boy from having good quality food…and treats…I have to admit I was pretty determined to figure out how to make him cookies, cakes and donuts that either didn’t taste like sawdust or wasn’t so moist that it couldn’t hold it’s form! There was a lot (and I mean a lot) of trial and error, but in the end I discovered some great alternatives to traditional cooking and baking and have to pat myself on the back for a moment because my chocolate chip/pretzel cookies (aka Max cookie’s) are pretty darn fantastic! Some might even say they are out of this world…okay, I don’t know about that, but they are often requested at family gatherings so that really says something!
